Healthy Meals Monday ~ Jambalaya

I have always used the Zatarain’s Jambalaya mix but I saw this recipe in my healthy recipe book and it only has 189 calories per serving!  We had it tonight and I pretty much loved it, so I scrapbooked it, printed it, blogging it now, and will laminate it tomorrow to go in my favorites recipe book.  Here are the details and I am adding a link at the bottom so you can download the 8.5×11 recipe if you like, enjoy!!!

Jambalaya Style Sausage and Rice

1 16oz package frozen (yellow, green, and red) peppers and onion stir-fry vegetables
1 14.5oz can diced tomatoes, undrained
12 ounces smoked turkey sausage, sliced
1 tsp Cajun seasoning
1 8.8oz pouch cooked brown rice

In a large skillet combine stir-fry vegetables, undrained tomatoes, sausage, and Cajun
seasoning. Bring to boiling; reduce heat. Cover and simmer about 5 minutes or just
until vegetables are tender. Stir in cooked rice; heat through.

Healthy Meals Monday ~ Taco Pizza

A couple years ago I bought a book called Eat Well, Lose Weight because I wanted us to eat healthy.  Kyle and I are fairly healthy people.  We like to hit the gym regularly (although I’ve been slacking lately) and just so we don’t pack on the LBs, I’ve been trying to cook a little healthier as well.

I used to think that if something is healthy it probably isn’t very good.  I was quite wrong.  I am finding a lot of yummy recipes in this cookbook!  I have a scrapbook recipe book that I keep all my favorite recipes in so I don’t have to thumb through hundreds of recipes.  So several of these I have scrapbooked and shared with my mom and my bestie because they are the ones that ask for copies.  Last night my mother-in-law saw something we were eating and decided she wanted to buy this recipe book because she has seen so many meals that I have cooked from it that she thought looked good.

Since more and more people are starting to get interested in these recipes, I thought I would start sharing some of my favorite ones.  I will start posting recipes on Mondays and will find a way to share my digital scrapbook recipe with everyone so you can print it out yourselves.  I don’t have one this week because I just came up with this about an hour ago 🙂  So here is recipe one that we tried for the first time tonight and I thought it was WAY yummy!

Taco Pizza

Prep: 30 minutes
Rise: 30 minutes
Bake: 16 minutes
Oven: 425 degrees F

1     recipe Pizza Dough (I just bought the canned pizza from Wal-Mart)
1     cup shredded reduced-fat cheddar cheese (4 ounces)
12   ounces extra-lean ground beef
1     medium onion, chopped
2/3 cup salsa
1 1/2 cups chopped tomato
1/2 to 1 cup shredded lettuce and/or spinach
1     cup packaged baked tortilla chips, coarsely crushed
Light dairy sour cream (optional)

1.  Prepare pizza dough.  Preheat oven to 425*F.  Grease a 12-inch round pizza pan; set aside.  Punch down dough; let rest for 10 minutes.  On a lightly floured surface, roll dough to a 13-inch circle.  Transfer to prepared pizza pan, allowing excess dough to extend over edge of pan.  Sprinkle half of the cheese in a thin strip around the edge of the dough.  Moisten edge of dough.  Fold edge over cheese in a thin strip around the edge all over.  Bake about 10 minutes or until lightly browned.

2.  Meanwhile, in a large skillet cook beef and onion until beef is brown and onion is tender.  Drain off fat.  Stir in 2/3 cup salsa into the beef mixture.  Spoon beef mixture on crust.  Bake for 5 minutes more.  Sprinkle with tomatoes and remaining cheese.  Bake for 1 to 2 minutes more or until cheese melts.

3.  To serve, cut pizza into eight wedges.  Top with lettuce or tortilla chips.  If desired, serve with sour cream and additional salsa.  Makes 8 servings.

Kristi’s tips:
Lately, I have been buying almost everything in the Light or Reduced-Fat version if it is available.  I haven’t been disappointed with any of them either.

For this meal I strayed from the recipe more than normal.  First of all I bought a can of the Pillsbury Pizza Crust because I’m too lazy busy to make a crust from scratch.  Kyle makes some AWESOME salsa, so we used his salsa instead of store bought.  Being as I just bought a TON of green chili, I added some chopped green chili to our pizza.  You will notice that one side of our pizza looks different than the other.  That’s because Kyle doesn’t like tomatoes and I don’t like crunchy things, so I customized our halves of the pizza.  I also used Romaine lettuce instead of iceberg lettuce.

Don’t worry if your recipe doesn’t look anything like mine because my meals NEVER look like the picture in the recipe book.


11 Months

Kylee is growing up SO fast!  I can’t believe she is going to be one in one short month.  This last month has been such a fun one though.

Kylee is REALLY starting to get her own little personality.  This does include throwing fits when she doesn’t get her way, which I REALLY don’t like, but the other part of her personality is so much fun.  She laughs a lot and she is turning into such a cuddler.  She loves to give hugs and she is always hugging and cuddling with her puppy.  She also started “sharing.”  She will give stuff to us or try to give us some of her food.  She started feeding Miss her food too.  Kylee will start something new, do it for a few days or a week, then quit doing it.  Like waving bye bye and last month she started clapping, well this month she started “dancing.”  I tried so hard to get this on video but she would never do it for the camera.  Whenever there would be music playing she would squat down and stand back up several times.  Of course that was last week, so she won’t do it anymore.  She has recently started pointing at things as well.  She will point at something real quickly and just make a one syllable sound.

One thing she hasn’t grown out of already is throwing things.  We have to make sure to check the stairs before we walk down them because she is always throwing things between the gate rails down the stairs.  In the bath she will throw a toy out and I’ll throw it back in.  What impressed me is that she has a lot of toys in the bath with her, but she will pick that one toy back up and throw it out to me and we will do that for a little bit.  She has a couple balls that we use to play with her also.  We will roll it to her and she will throw it back.  It doesn’t always go forward though.  🙂

Last month I mentioned how fast Kylee has picked up walking and she is so fearless and determined that she pretty much has it mastered already.  She doesn’t crawl at all anymore because she has to walk everywhere.  She doesn’t really fall anymore either unless she’s tripping over something.  One thing that she does get from her parents is that she doesn’t really watch where she is going.  She even started standing up on her own, not needing to crawl to anything to pull herself up.  We went to lunch with my best friend, her “Auntie Jen” and Jennifer laughed because Kylee was showing off and even walking backwards.  Now that she is on the move it is even more difficult to get her to stay still for a picture but we always manage to get a few…

Balloon Fiesta

This year we had the opportunity to go to the 40th annual Balloon Fiesta in Albuquerque.  We had never been but you always hear how good it is.  Good doesn’t do it justice, it is AWESOME!  There are HUNDREDS of balloons that go up and while they are inflating you are just surrounded by them.  It’s an experience that’s hard to describe but it is DEFINITELY worth it.

Saturday we went to the evening festivities that included the balloon glow and a huge fireworks display.  The balloon glow was neat, the first picture is of that.  Sunday morning we woke up at 4am to catch the bus for the dawn patrol.  That was even more cool!  There weren’t as many balloons for this as at night but these ones went up in the air and they would all light up at the same time or flicker at the same time.  Then came the massive balloon ascension where all the balloons lined up, inflated, and took off.  That was my favorite part and Kylee enjoyed looking at all the commotion and colors.  There were so many fun shaped balloons and I didn’t want to post 50 pictures, so there are a few below.

I had to laugh because if you walked around the Spiderpig balloon for a few minutes, you heard several people singing “Spiderpig, Spiderpig, does whatever a Spiderpig does.”  I admit, I sang it myself too.  🙂

30 Before 30 ~ Craftiness

One thing on my 30 before 30 list is to do 20 DIY projects.  I’m actually doing really well on that goal; steadily on my way there.  I’ve done several projects.  I have made the shirt that Kylee is going to wear on her birthday (pictures of that will be on her birthday post), I’ve made Kylee some cute headbands, I made a pin board to hold all of the cards we get from our family and friends, I made a snowman hat for Kylee, and I also made a bow holder to hold Kylee’s growing collection of bows and headbands.

The first thing I made was this pin board.  I see a lot of boards like this, but never in a pattern I like, big as I want, or as nice as I want.  So I decided to make one!  I bought a roll of corkboard and glued it onto a poster board.  Then I put two layers of batting on the board and covered it with the material that I liked.  After that I glued ribbon in a crisscross pattern.  I bought flat push pins and a set of black square brads from the scrapbooking section at Hobby Lobby.  I cut the prongs off the brads and glued the squares to the push pin, then glued them where the ribbon intersected.  I also made extras to pin stuff up.  I had measure the board to fit inside a frame that I had bought in the custom frame isle when they were half off at Hobby Lobby.

The next project I did was Kylee’s bow holder.  I simply bought a wooden K and a piece of scrapbook paper that I liked cut to fit the K and glued on.  I bought some hooks that screw on and painted them purple to match the paper.  Then I simply glued on ribbon to the back of the K to hang it and to clip the bows onto!

This is my project that I just finished today.  This is the first hat that I’ve made and I love how it turned out but there are some changes that I will make if I ever make another.  I saw this snowman hat and a penguin hat that I thought I would try to make myself.  I couldn’t find a tutorial on how to make it so I had to wing it.  I’m actually very proud of myself with how well it turned out with no instruction.  This one was way too much to try to explain, but maybe one day I will post a tutorial.  Kylee doesn’t look happy about the hat but it’s because she’s not feeling well, I promise!
